As the grape harvest season moves forward on Santorini, a beloved destination in Greece, winemaker Yiannis Paraskevopoulos is facing a daunting outlook. The local Assyrtiko grape, a cornerstone of the island’s renowned premium white wines, is under serious threat from rising temperatures.
